AMARONE DELLA VALPOLICELLA A full-bodied, chocolate and raisin-scented wine made from dried grapes. The same varieties – Corvina, Rondinella and Molinara – are used to make Valpolicella in northern Italy. Grapes are laid out to dry for several months, then fermented dry and aged in oak, yielding high alcohol dense wines. Modern styles have an intense sweet cherry and chocolate cake flavour with incredible richness, making it ideal for hearty Korean barbecues.
