The Ponsot synthetic closure
Wine-traditionalists may scorn at the plastic corks and modern wine bottles that are present in many New World wines of today. But it's not just the New World that is embracing the trends. Domaine Ponsot is a family-run winery in Cote d'Or, Burgundy, started in 1874. While appearing a typical Burgundian winery, small and modern advances set Domaine Ponsot apart from its neighbours.
Instead of traditional corks, Laurent Ponsot, the manager of the estate, devised a synthetic closure after nearly 20 years of trial and error. Another interesting note - this tech-savvy Domaine developed their website in 1989. They claim to have the first website for a winery in France.
